Elegy to eggplant

I love that instant
when I cut into eggplant,
the bright glossy skin
opening to spongy beige
speckled with darker brown flecks.

The muted green stem
flanked by clinging leaves
like a gem’s setting
only adds to its allure
before I peel it away.

  1. I enjoyed the image of cutting into an eggplant, one of my favourite vegetables, especially in melanzane parmigiana! My favourite lines are:
    ‘The muted green stem
