Elegy to eggplant

Time to make a grocery list…


I love that instant
when I cut into eggplant,
the bright glossy skin
opening to spongy beige
speckled with darker brown flecks.

The muted green stem
flanked by clinging leaves
like a gem’s setting
only adds to its allure
before I peel it away.
